Nuts about Granola

This has to be one of my favourite recipes. I always have a jar or two in my cupboard ready as a quick and easy breakfast option. The great thing about this recipe is you can add any nuts and seed you like, you can also try adding ingredients like puffed rice, millet or go gluten free with quinoa flakes instead of rolled oats.

Ingredients:
150g pistachio
150g hazelnut
150g macadamia
150g pecan
150g walnut
25g pine nut
50g sunflower seed
50g pepitas
800g rolled oats
150g cranberry
150g raisin or sultana
150g dried figs, sliced
6 tbsp honey

Preheat oven to 160c. Mix nuts, seeds and rolled oats together and spread out onto lined baking trays. Drizzle with honey (I recommend you add honey to your taste add more or less depending on your sweet tooth). Bake in the oven for 20 to 30 minutes or until lightly golden. Check after 10 minutes and stir to ensure even toasting.

Once cooked and while mix is still hot toss all dried fruit through the toasted granola.

Allow to cool completely and then store in air tight container.

This makes a great breakfast or healthy snack. Granola is great served with milk, yogurt and fresh fruit, or try it with coconut milk and frozen mango yogurt or with cinnamon and stewed apples.
