Spiced Pumpkin Cake with Coconut Cream Icing and Roasted Hazelnuts

My brother is a massive foodie and full on health nut. For his birthday he asked if I would make him this awesome spiced pumpkin cake with coconut icing, possibly one of the healthiest cake I’ve ever made. He came across it on another foodie blog by the amazing Sarah Britton of My New Roots. I gave it a go and was so impressed with the result. The flavours work so well together, the use of coconut milk for the icing with the toasted hazelnuts for texture is brilliant but even better is the use of banana and pumpkin in the cake mix to keep it moist. The cake is packed full of spices which boosts the flavour and gives the cake a real kick. Through these methods and the use of honey this recipe is as healthy a cake as you can get.
